It has taken five years to make this Spectacular Sparkling English Wine and it has been worth the wait.  We have blind tasted it against the best Champagne houses and it wins every time.

Grapes: 53% Chardonnay, 30% Pinot Noir, 17% Pinot Meunie

Vinification:

This wine had a short, simple first fermentation harnessing the freshness of the grapes but true complexity, which this wine has, is a long term process. The second fermentation was long and cool allowing the complexities of the grape to emerge with malolactic fermentation offering further depths as it turns the malic acid into the softer lactic acid.  This wine has spent 35 months on the lees in the bottle before disgorging.

Tasting Note:

Beautiful bubbles, glorious colour and then the nose . . . . toasty, toasty, toasty which just continues on to the palate with an underlying freshness which lasts forever and ever. It is truly Spectacular. We are very proud.
